Today's exercise. Reformulated, New Hyde Park, L.I. style Grandma Sicilian pizza ( Trial size)
Test bake of a new high hydration dough formulation. Bake off T minus 60 minutes. Crap! In my haste to dig in I forgot to snap a photo of the intact pie.
This thinner Grandma base is much higher hydration (100%.) The fat is double split between more olive oil and some butter. The process is room temperature fermented for a same day bake.
I used to hang out at the Starlight Ballroom on Jericho Turnpike all the time, but I had no idea there's a new Hyde Park-style pizza - yours definitely looks delicious!
I never knew you were from NY, L.I.. legend had it that, Umberto's Pizzeria & Restaurant, in New Hyde Park invented the thin Scilian pizza with the sauce on top of the cheese. ( Upside down) Named the Grandma pizza pie. Being NY there is a controversy. King Umberto's a few blocks away, claims to be the original grandma pie.
Looks great!
