Today's exercise. Reformulated, New Hyde Park, L.I. style Grandma Sicilian pizza ( Trial size)
Test bake of a new high hydration dough formulation. Bake off T minus 60 minutes. Crap! In my haste to dig in I forgot to snap a photo of the intact pie.
This thinner Grandma base is much higher hydration (100%.) The fat is double split between more olive oil and some butter. The process is room temperature fermented for a same day bake.
Looks great!
That would make a pretty hearty meal.
