The crunch is mostly from the fermented rice flour topping. As well as just a little corn meal sprinkled on the parchment paper. As mentioned above they are a bit salty. But delicious. Less salt next time.

How did you like the coating as far as taste and texture?  A local restaurant used to serve a simple yeasted boule with the coating but the bread was pretty bland so hard to tell.

I just looked up Ralph Nieboer's tiger rolls porridge, it included  bread crumbs. Additionally I am sure I use regular flour instead of rice flour for that bake. I remember the topping was a little heavy. I did not love it. This one is much nicer. 

I don't know why they call for so much salt in the topping. 6g in 107g of rice flour. I think much less would be enough to bring out the Sweetness. Still, in the final product the salt was understated, and subtle. A few months ago I was looking for a hotdog roll to fit the Jumbo Costco hotdogs and be soft and tasty. These are perfect, and better than any of my experiments. The next exercise will involve cocoa black & baking. From week four of KA. Big month of bread series.
