I used an eight-grain flour, which has linseeds and sunflower seeds in the mix, to feed my starter. Will the oils have an effect on the starter when stored in the fridge? I don't feed my starter often, and it lives in the fridge for weeks at a time between feeds. Will the oils go rancid and have a negative effect on the starter?
Eventually they will - but you'll know when they go. Enjoy!

I think that the lower temperature and anaerobic environment will help extend the shelf life beyond what it would be for the flour just sitting on the shelf.
Hope you're right and they don't negatively effect the starter. Just to be safe i'll feed it a bit more often and they'll be replaced sooner rather than later.
