Anybody know why I'm getting cracked edges like this in my pasta madre? It's 40% hydration, hasn't happened in the previous feeds and even it came out of the mixer it was nice and smooth.
When I have seen this, it usually has indicated that the balance in my lievito madre is off. Continue feeding it consistently, mix for around 7 minutes, then allow to sit for 10 minutes before rolling.
i believe my pm is too acidic. strangely after starting to notice this i see the life being sucked out of it. its nto doubling anymore after 18hours at 18c in water. and it stopped trippling in 28c too. no idea why this is happening
Afai understand this cracks appear at the very beginning when you roll the LM. In this case my 1st guess is the gluten structure. At 40% hydration you don't have a lot of elasticity for such a thin layer of dough. As SueVT mentioned earlier I would let the LM first rest for a few minutes (after mixing). This should help the dough to relax and make it more elastic.
My LM has also cracked edges at 40%. They just look a bit different than on your picture. Because I'm not very patient and don't want to wait so long my LM has usually a hydration of 45-50%.
