A nice bake with added whole wheat

A couple of nice loaves. 20 hour cold proof in the refrigerator baked at 500F in a dutch oven.

225 grams of poolish

330 grams of freshly milled wheat flour

670 grams of bread flour

700 grams of water

20 grams of salt
