40% white bread flour. Semolina sourdough starter.

 Something different...and it toasted up nicely in the oven.

This is one of my favorite types of bread.  You achieved a perfect crumb.

Love what Semola does for flavor. The yellow/cream crust is beautiful. Bet the crumb is more yellow your photo shows, too.
