starter

Toast

Hello all, my 4 week old starter is rising nicely, well over doubling, quite puffy but has virtually no bubbles, just a few large ones on the surface.  It's passing the float test.  There are no posts about a non-bubbling but well rising starter and it just seems odd that mine is doing the opposite!  I wonder why this is.   Thanks

Agreed. You don't say what the hydration of your starter is. If it is more than half water, by weight, you probably won't see big bubbles.

The hydration is 100% by weight.  There are a lot of large bubbles on the surface, but virtually none in the rest of the starter.  All the pictures I see of strong, active starters have bubbles in the entire body.

Have you actually baked with it yet? My starter seems more spongy or bubbly when I use high-protein flour. Might that be it? In any case, don't worry about what it looks like. What matters is whether it gets the job done.
