I normally make 100% home milled winter white whole wheat sourdough bread. I made some for a friend, he took it home and said he and his wife and kids liked it. His daughter, however, sent back a very nice note saying she liked it, but it would have been better if it had jelly beans in it. So now, my next bake will be with Jelly beans. Since I never make bread with add ins, I am guessing I will knead the flour as normal, and then at the end throw in some jelly beans and knead a few minutes longer, then allow to bulk ferment, then shape, final proof and bake. Does that sound right , or should I put in the jelly beans during the shaping? I was afraid to put them on top of loaf like seeds, thinking they would melt.
She also pointed out in her note that the bread would have been better with chochlet. I assume I can just use semisweet chocolate morsels, and through them in part way through the kneading, correct?
Good luck! The chocolate chips...been there and done that....but jelly beans?? I'd go for the small jelly bellies...just avoid the puke flavored ones. Just saying.

Thanks, my friend is supplying the jelly beans, and I will probably chop them up if they are the large ones. Did you go with chocolate chips - and if so, did they melt ?

everytime I've tried baking jelly beans they came out hard when cooled. I think they make better cold toppings. It sounds like the girl prefers Muffins?
Mini, thanks, I will wait till there is just a few minutes left, then sprinkle on top. Tomorrow I will try the chocolate chips in a regular yeasted bread.
So I made a small loaf with chocolate over the weekend. I used Hamelman's Baguettes de Tradition, though substituted 100% KA WWW, and make a mistake on the chocolates . I used a bag of Ghiarardelli Bittersweet Chocolate chips 60% Cocoa - while they are probably fine for chocolate chip cookies, they felt overly big when I mixed them into the dough . I started with a bunch of chips, but as I did turns and folds, I removed the ones that were close to the surface, because I didn't want them to show through when baking. The loaf turned out fine, and the girl I made it for said they liked the taste when it was toasted - but if I make it again, I will go with mini chips. Still waiting for them to get me the jelly beans so I can try my hand on that.

That is soooo cute. No wonder your trying to please that little girl. You could make a brioche with a chocolate ganache inside and a pretty jelly bean on top. I KNOW that will please a little girl. My granddaughter loves the little mini brioche that way...but I never thought of putting a jelly bean on top. I usually just put a little sugar flower from my cake decorating left overs...she thought they were "darling".
