Hope everyone here is doing well. Here's my weekend bake......
1. SJSB... Getting a little better than last bake. I have reduced hydration by 5% and the dough is more manageable but the crumb was not as open as last bake.
2. From Ken Forkish, FWSY, Ovenight Country Brown, quite pleased with the turnout for a first try.... again i had reduce hydration by about 5%.
3. And also from FWSY, pizza!!! Also with reduced hydration.
It quite challenging to do so much as I only have sunday off. Welcome all comments and critics.

Well that was certainly a successful, and no doubt very satisfying, weekend bake.
Baguettes and Bread loaf look very nice with good oven spring and crumb.
Your pizza has just made me crave some.
I still got 2 dough in the freezer, can DHL to you!!! :)
I especially like the crumb on your Boule. Did the get a thin crust on the baguettes? I baked 3 yesterday and the crust was too thick for me.
I bet you are thinking about bread baking while you are working. How does you family like your bread?

I think it quite thin...my daughter don't like bread and my wife love very soft buns with bean paste filling only, good things my neighbours are supportive. Wish I can be like you retire and bake full time :)
Those baguettes look wonderful. I haven't had the courage to make these yet.
I remember my first SJSB, after proofing, the dough was so wet I almost throw it away. Fortunately, I summed up enough courage to put it in the oven and viola.....JUST DO IT!!!

Hi Ru, thanks for your likes! I have a baking wish bucket....this weekend I try Sourdough Sandwich Loaf (any good recipe around here), then I move on to croissant and then......well.

Forkish recipe is wise but the normal SJSD is fine at the original hydration if made as a boule. I think the pizza is under baked looks a little pale and I bet the bottom of the crust wasn't browned very well but I bet it tasted great:-) The baguettes and Forkish look grand. Next thing you know you will an old pro at this. My wife and daughter didn't like SD much either at first but they are won over now. I just kept making stuff with it that they had to eat after hearing me say wow, killer, man that's good and best bruschetta ever, love that pan cake. never had a better sandwich I could dip this in anything :-)

Ya, theat pizza crust look a bit pale, but I have to check with my neighbour if it turn out ok! Mine is a little over done....
Well, that why this Fri I gonna bake something soft...sourdough sandwich loaf....
