Yes, spot on. It will be called 'chef', 'mother', starter, culture, and probably other things that I can't remember or don't know about. Essentially it is the mature sourdough culture that you keep and use as a base for building levains and dough. Hope we get to see some of your sourdough adventures in pictures!
