Last year I was in France. In a town on the Brittany coast I bought this white bread. It was so delicious: fresh, a tiny sour, but no sourdough consistency. It looked almost like a cake, very crumbly and maybe a touch of yoghurt?
Anyone any idea what this was and how I can make something like that?

No, it wasn't a brioche. It wasn't sweet and looked like a boule.

The first one uses sourdough, the second is yeast.
