1 Cup Einkorn Flour to Grams?

Hello, I have been trying to make bread using only 100 percent Einkorn flour and sourdough starter. Recently I bought a scale for accuracy. Is there a commonly accepted weight in grams for one cup of Einkorn flour? What would the equivalent be to grams for 1 cup of water? Even sourdough weights would be appreciated. Thanks. 

In the range of 105-125 grams of einkorn flour per cup, but varies based on circumstances

~240 grams of water in 1 cup

Hello, I know this post is older, but as a new Einkorn flour baker I had the same question and was lead here.

Basically, 1C of AP einkorn = 120g and 1C of whole grain einkorn = 95 g.  A full explanation can be found through the link.

I poured some of my whole grain Einkorn into a mixer bowl stirred the flour to break up lumps and took some scoops of flour, ran a flat edge across and came out with 95g, 99g, 105g,  106g, 112g  and 109g      Dry cup holds 240ml.

Came out much lower than I thought it would!    Average is 104g   So let's make it 105g for easy maths.

My Einkorn flour, for 100g:    9.4g fibre, 15g protein,  58g carbs.

For instance, how long can it be stored at room temp?  How finely should it be ground for bread making?  What's it's gluten content?  And anything else anyone wants to add?
