You've taken on a great challenge! Spend some time searching through the forums here, and other sites dedicated to sourdough. You'll get all kinds of advice on starting and maintaining sourdoughs, some of it conflicting, but if you have patience, curiosity and support (as you will here for sure!), you'll end up with something wonderful to behold and eat!

There are real experts here who are amazingly generous with their time and advice.  Also there are numerous people here from all over the world, UK, USA, Slovenia, Brazil, South Africa, literally all over.  It's a very nice and (mostly) cohesive group.
