This is my first starter. It's two weeks old and I already used it three times. It worked quite well.
I'm just curious because it leaves a slightly smells like doughnuts dough. Smells really good but I didn't expected this smell.
It's a 100% hidratation starter. I fed it with organic rye flour the first two times, then organic white flour. It also started with orange juice instead water.
Any thoughts?
and with a higher ratio of flour and water to starter, you don't let the acid build up and you end up with a sweet smelling starter. I believe that temperature has something to do with it as well. If you want a sour starter, you do the reverse. There are lots of posts on this site that explain how to get a sour starter. Personally, I prefer a sweet smelling one.
I was feeding it quite often because I was doing bread quite a lot lately.
I quite like the smell and taste, I was just curious about it.
I may try to make it more sour, just to see the differences.
Thank you!
...and don't forget hydration and type of flour too. Lower hydration and more wholegrain for a more acidic starter.
