I've baked two sourdough bread yesterday. The first is hydration 70% and the second is 65%. Although different ingredients, 65%hydration has got better crumb. 65% bread recipe is here,

I'm really new to baking sourdough bread. Just have baked bread with my own sourdough starter since April and lots of tips I've had haven't dawned on me. Every weekend I try baking bread and small progress I gain.
I think both of your loaves looks great. You've achieved a lot in such a short time.
Did you follow the same process for both loaves?
I could't lift the 70% dough from a bowl and just dumped it to the Dutch oven. I thought the air in the dough collapsed! The result of this bread surprised me much:)
Not exactly the same process as I wanted to find the best way of baking sourdough bread so I shouldn't have used the term "comparison".

I'm more comfortable with a drier dough too but even though I manhandle my wet doughs I'm still surprised how open they were, anyway they're rustic but of course I need to improve my technique and not rely too much on luck.

Before using sourdough starter, I got used to baking small buns and rolls with stiff dough so handling wet dough is much more difficult.
What I like the most about sourdough bread is its sourness which goes with mild natural cheese.
I too don't rely on my beginner's luck and accumulate skills through weekend baking.

It's a mere beginner's luck. When I do pre-shape my hands and bench knife dither over wetty dough! Doing final shape is not so difficult but pre-shape is like a snag to me.
