Something else I am never sure about is this; should the crumb be completely dry or ever so slightly moist ?

Yes, but not gummy. Cutting into it too early is usually where "gummy" shows up. Of course some breads are dryer than others so it is a bit relative. Really dry crumb is not usually the goal though.
