Super quick super lemon curd... ignore the date on picture

   

Microwave Lemon Curd

2 Lemons (juice & rind finely grated)
3 Eggs Whisked
2 oz Butter

8 oz Sugar (scant)

Melt butter, add rest of ingredients 5 mins in Microwave(whisk every minute)

We're in another heat wave! 

I have to bake at midnight when the house is cooling down or in the early morning hours (Gosh, like a real baker!)  to avoid heat exhaustion.  I can't remember a summer so hot as this one... Siestas, refreshing drinks, and cool showers or mountain lakes ...surviving skills!  (My yodel has dried up!)  It does cool down at night, thank goodness!

 Keep it in the fridge remember it has eggs and butter in it so it will not last too long but then no lemon curd  will keep long....

 great recipe I've also have been using for sometime...try it with limes...yummm!  I orginally got the same recipe from Allrecipes.com there are over 4300 reviews - 5 star recommended and lots of photos.  Just delicious.
