Hi, I signed up a few days ago and just noticed this spot for introductions. I have already learned an immense amount from reading the posts here. I have been baking a mediocre-at-best loaf for the last 20 or so years off and on, never really paying much attention to it. I recently got fascinated with making top quality pizza which means top quality dough and that has raised my expectations on breadmaking as well so I am trying to "raise my bar".
