We love my Cheddar and Jalapeño bread. We are having family over for Easter and my daughter-in-law is lactose intolerant. Is there a good cheese substitute that I could use. I know there are several choices out there but is there one that works best in sourdough bread? I live on an island in Puget Sound so sometimes the choices are limited when it comes to foods like cheese substitutes.
My understanding is that if a cheese has been aged enough, it doesn't have enough lactose left to be a problem. I have read aging times of 6 months and 1 year fit the bill. You should check with DIL, of course. Also, cheeses made with sheep or goat milk are usually all right. So is yogurt, since the lactose mostly gets fermented away. GuerneyGuernsey cows, but their milk has a variant form that many lactose intolerant people can tolerate better.I don't have lactose intolerance but I live with someone who does.

Thanks TomP. I did a google search and you are correct. I will check with my daughter-in-law and she if she thinks she can stand a small amount of lactose. I know she has a pill she can take that helps so maybe I can just use a good aged cheddar.
