Banana Bread

I made Floyd’s 10-minute banana bread today. It’s amazing what you can find while browsing back through the old posts. I found this a few days ago, so I have been patiently waiting for the bananas to ripen to very ripe. Floyd’s post was in May 2005 and can be found here:

I loved the lightness and texture of this bread. I noted some of the other comments in the post; and noted that David (dmsnyder) found it was a bit salty, so I used unsalted butter. I also added the optional cinnamon. The flavour is wonderful and the best banana bread I’ve tasted.
