Gummy texture

Hi there. Looking for some advice with this. Getting nice tasting bread but a bit gummy in texture, as if undercooked. Following a recipe which should work. Any help appreciated

I had this when starting out making loaves and it was 100% that i wasn't letting it cool enough before cutting into it. As soon as i let a loaf fully cool before cutting in, i got the tender crumb i was expecting.
