Did I do it right?

My sourdough starter is 3 weeks old now and since day 2 it hadn't shown any activities but some bubbles on top. I fed it with a 1:1:1 ratio with bread flour and spring water since I could not find any whole wheat flour or rye. 

2 days ago I decided to feed it with pineapple juice and finally it has shown some rising and falling. I am so excited to bake with it after some more feedings. Did I did it right because I have heard that pineapple juice should only be used in a first few days but since I was so desperate, I just gave it a shot to see how it goes.

My question is should I keep feeding it with pineapple juice or go back to water or feed it with a mix of half water and half pineapple juice? Also, how to tell when your starter is ready?

I think your starter is ready when it's reliably doubling within 4-6 hours (at warm temps) – not using pineapple juice.

I'd go back to feeding it with water if I were you
