What is the easiest no frills way to make pancakes from the discarded sourdough? Least ingredients?
Lazy me doesn't want to mix a dozen ingredients early in the morning, measuring each one as if carefully weighing the feedings every evening wasn't enough )))
This is the easiest I found that uses up a lot of discard: KAF crumpets without the metal form rings so turns out like pancakes. https://www.kingarthurflour.com/blog/2020/03/23/sourdough-crumpets just add a little sugar, salt, and baking soda. I’d be curious what else is out there!

I often get a couple of tablespoons of whatever flour I fancy out of cupboard (usually wholegrain), blob in a heaping teaspoon of starter, and then mix to a paste with water.
Sometimes I have the foresight to do this the night before, sometimes not. If I remember I add a pinch of salt before cooking.
I heat a cast iron pan for longer than you'd think, drop in some ghee and fry the pancake.
Easy and delicious.
Thank you for confirming it is this easy. Because some recipes I see out there require half a dozen ingredients at the least including several types of soda )))
Here is my super easy pancake recipe with discard:
- 1 cup (roughly 220g) sourdough discard straight from the fridge
- 2 eggs
If you have less discard, use less egg (last time I had 100g, so I used 1 egg and got 2 small pancakes)
1. Mix together in a bowl till well mixed.
2. Add some salt and stir it in, optional add 1/4 tsp baking soda and stir it in.
3. Heat olive oil, butter or coconut oil in a pan on medium heat.
4. Once hot, pour in a ladleful at a time of the mixture (1 cup starter will make about 4 small, or two large pancakes)
5. When it becomes bubbly, about 1-2 minutes in, flip it
Voila! I have these savoury - make salads as fillings, it always turns out delicious.
