That's a great loaf! There's something addictive about onion in bread. Never could quite put my finger on it, but a nice marriage. Throw some black pepper in there too. Oh man I'm getting excited.
I'm having a nice turn out with yeasted, 50% fine organic spelt, 30% organic white wheat and 20% organic whole wheat. ...oh with 2% fat milk and potato water (with a dash of ground caraway not enough to notice but makes great boiled potatoes!). No scoring. I slice the next day and freeze it up for popping into the toaster. Gives a light crumb and toasts quickly.
My younger son hates the texture of onions. My thought is, there is nothing as too many onions. What this means is that I MISS ONIONS! I hope someday he'll outgrow it as he has with so many food things (autism), but for now, I'll drool over this picture and imagine making a sandwich with swiss cheese and good deli meat and toasted up in a panini press.YUM!

Toss in a tablespoon or so!
I like to nuke them with a little water to soften. Of coarse hitting 'em with a hammer can do that too. :)

Caraway seeds with toasted onion is the best!
