Also know as Practice makes perfect. Modifications:

1. I shaved some time off the Bosch mixer ride. Additionally, I skipped the stretch and folds during the room temperature bulk ferment, in order to preserve precious CO2.

2. I was much less aggressive during the pre-shape phase. I also nixed the plasticrap in favor of cotton.
