I just wish there was less four on the dough. I tried to brush it off but that was not working. The flour became damp in the refrigerator. It is a dilemma, not wanting the bread to stick in the brotoform and not wanting all that excess flour on the crust. These are hard questions to ponder!
As for flour on the baked surface, what I do is use a pastry brush within the first five or so minutes after the loaf leaves the oven and sweep off the loose flour from the crust. That will get rid of the excess flour, but still allow for an adequate amount of flour in the banneton.
I am thinking with the top of the loaf covered with poppy seeds, I will just flour the sides of the banneton. The look I am looking for is the black/yellow contrast. Think Pittsburgh Stealers.
I was hoping for a brighter yellow color. I may up the turmeric by 1/2 tsp. The taste of the bread, as is, is very nice with just a hint of turmeric detectable. I don't want to disturb that balance to much. I posted the recipe I used in my blog, if your interested. Petty easy, with an impressive result.
That is beautiful!
I am pleased as punch with this loaf!
Very nice indeed! You're continuing out lovely loaves.
I have to say this loaf turned out very well!
Here, here!
Well done!

That looks like a winner.

Happy baking.

What is making the crumb that lovely yellow colour?
