I currently have an established healthy sourdough starter. It's in my refrigerator and I feed it once a week. The feeding have been 2 ounces of starter, 2 ounce of water and 2 1/2 ounces of flour. I'm not sure what hydration that is. What ever it is I need to change it to 100% hydration for a recipe.
I'm not sure how to change it.

Just start feeding it 1:1:1. for a few days.
