Just back from Sicily after sampling some delicious sandwiches using panini. We had had some tasty treats in paninis including prosciutto and paper-thin cheese with sun-dried tomatoes and olives, spread with olive oil rather than butter. The panini had a lovely open crumb too.
I would love to try making my own panini, preferably to make them a bit healthier than just straight white rolls, but there seems to be a shortage of recipes. Nothing from Paul Hollywood or Giorgio Locatelli.
Anyone found any good panini recipes?
But a quick Google found this with favourable reviews if it helps, http://www.kingarthurflour.com/recipes/panini-bread-recipe
OK thanks. Doesn't look very authentic.
A little more reading, quite interesting

Panini are most commonly made with small loaves of ciabatta.

NB: Don't skimp on the malt, it essential for success. If you don't have diastatic malt available use malt syrup or honey instead.
That's a great ciabatta recipe. And using the online translate function is absolutely hilarious!
