just wondering if anyone knows if a slow fermentation increases openness of crumb. I recently made a oat and multi seeded sandwich loaf (using instant dry yeast) with a 50% poolish and i got a great tasting loaf with an open crumb which i wasnt really expecting as there was butter in it too (although i presume seeds open up crumb too) and i thought the butter would both tighten the crumb as well as tenderizing it.
Im happy with the bread i just want to know if its because of the 14 hour pre-ferment of 50% of the flour. Crumb shot below

Delighted to it's:
night 1
poolish (50% for approx 12-14 hours)
75g whole wheat
105g bread flour
180g water
1/16 tsp instant dry yeast
soaker
25g sesame, toasted
25g sunflower, toasted
25g linseed/flax
75g rolled oats
30g honey
4g salt
120g water
final dough
195g bread flour
25g unsalted butter
4g salt
3/4 tsp instant dry yeast
all poolish
all soaker
crumb butter into 195g flour rest of dry ingredients add in wet ingredients, mix and rest. Knead (however you wish) leave to rise for about 30 minutes, shape, put into tin and proof. Score and bake for 45 minutes at 220 or until done.... everyone has their own method of making and baking so....

When you say knead, can I use the stretch and fold method? I am not big on regular kneading since I seem to mess that up pretty good.
You let it bulk ferment for only 30 minutes. Does the dough double at that point? Or how much should I let it rise?
What temperature is your kitchen? It is down right cold here so I need to adjust your fermentation times.
Would this dough be appropriate for Dutch oven baking?
I want to try making it in the next couple of days so I appreciate your responses to my questions.
No worries it's s lovely bread, moist and creamy from the oats with a slight sweetness from the honey and an added texture and flavour from the nuts. If you like sweet breads I'd add another 20g honey
