hi bakers my name is George rudd I want to show you my oven highest setting is 260 c it us convection used for kitchens do.I need to use a baking stone or can I use the racks and pans for baking pizza etc and artisan bread that require  direct heat baking like deck oven etc any tips of any one used in bakery would be nice cheers 

Start baking bread. You'll need some sheets to put the dough onto to load it in though. Also put a shallow tray on the bottom so you can throw in a cup of water just before closing the door to generate a bit of steam.

You should be able to bake either on stones (though they'd have to be smallish ones, like pizza stones or quarry tiles) or on heavy baking sheets. A shallow pan for steam on the bottom shelf would help too, as Gordon says. I use a heavy rimmed baking sheet on the bottom of my oven for steam and it works adequately.

Try a few loaves of different kinds and see how they turn out. Be aware that a small oven (at least it looks like a small oven; hard to tell from that photo) like that will likely have hotter and cooler areas, so you might have to turn and rearrange the loaves partway through baking.

Remove the three upper most racks and bake in a dutch oven that fits in the oven. i have been baking good bread in a small oven like yours.

FWIW - I recognise this oven. It's a 1/1GN size oven - each grid is 530mm by 330mm. It's a fairly common size for catering ovens. My Lincat EC08 is the same size with a 3Kw, fan oven and I can bake 12 small loaves in it.

The downside of this one is the grid spacing - I have 3 shelves in my Lincat - this has 4 shelves/grids. It makes them a bit too close together. The grids ought to be removable and steel shelves can be slotted right in. I subsequently replaced the 3 grids in my Lincat with 10mm steel plates.

ye that exactly  right  gordon do you use a pizza stone in your lincat or just use the power off the oven? and can you bake boules and batons  and baguettes in them I see marks baking rv market video  and he uses one and they look amazing mine never.look that good  cheers Gordon 

My Lincat has steel plates (which I had made) - 10mm thick by GN1/1 (ie. 530x330mm). I bake all sorts in it, but big boules are sometimes an issue due to the height limitation.
