Dry bread

Toast

I purchased a Panasonic bread machine for my wife. Three days ago she baked a loaf of plain white bread from a recipe that came with the machine. When it was done and cooled,  I cut a slice for breakfast. It seemed dry, nothing like bread from a bakery or even store bought. She followed all instructions and used a digital scale to measure ingredients.  Any suggestions or ideas would be appreciated. Here is the recipe provided by Panasonic.

  18 oz bread flour

2tsp salt, 2tbsp dry milk, 2tbsp butter, 1 3/4tbsp sugar, 1 1/2 cup water, 1 1/4tsp dry yeast. This recipe is recommended for a large loaf.

Model sd-yd250. Recipe was for a basic white bread.

Have a look here and download the manual for the Panasonic SD2501 http://www.lakeland.co.uk/15352/Panasonic-Bread-Maker.

To me the baking time for a basic looks pretty much the same so I think its OK to do a standard white loaf on the normal bread setting (don't go for extra quick). The recipes in this manual are very good so why not give it a try?

Now I don't know how the cups to weight compares but why not try small/medium?

If all goes well then compare and contrast the settings with the baking time charts. If they seem similar then experiment with more recipes from this manual.

Thanks sooo much. Will give it a go.

I just re-read the recipe and had miscalculated. So I am rewriting this. It is about 67% hydration which is very typical. So perhaps it is drying out overnight.

Edit: Did you weigh the water? 1.5 cups is 12 oz.

One more edit: The "dry yeast" should not be "Active Dry" yeast. It should be either "instant" "bread machine" or "rapid rise" yeast. This can also make a difference.

I will ask her as to what yeast she used. Thanks for responding and the info.

for any "off" tastes and especially check the powdered milk.  A commercial coffee creamer substitution might make the crumb dry and so can using a more absorbent flour than the recipe.  Another thought... If the flour is delivered sealed in plastic, it can be very dry, let the flour stand wide open to absorb more room moister for several hours before trying again.
