Thank you Paul for your kind words!  The croissant was deliciously butterrrrry, crisply shattering everywhere!  And the next day the shape was still strong and not at all deflated. The crumb was so very moist. Loved it!  Am going to try another batch and use them for my farmers market morning buns!  I made some mini morning buns out of the scrap edges.  Whoops the photo didn't go where I wanted it too.  Still have lots to learn about posting!
