Visiting Alsace Dorie Greenspan encountered tarte flambee and has written on her blog with enthusiasm about them. She has also started recipe testing and shares her current recipe and results. Looks like something those of you in the northern hemisphere might like to experiment with, for a change from pizza over the summer. (Mind you I'm working on winter versions of the toppings for myself.)
