dried malt extract? Our local co-op only had malted milk powder, which is not what I need I know, then in the brewing section, they have bags of dried malt extract, in varying lightness and darkness......can someone help with this one please? I asked the owner if it was diastatic or non diastatic, and he had no idea, so I pulled the KA baking book off of the shelf, and we looked up malt powder together, but he still didn't know.....
If a recipe calls for 1/4 cup, I'm assuming I need the non diastatic then? By the KA site, the diastatic is used in very small amts.
Thanks!
From the KA website on malted milk powder:
Diastatic malt contains malted barley flour, wheat flour, and dextrose. It provides active enzymes for the yeast.
It's for a recipe in the AB in 5 book.....I need malt powder. Anybody know Jeff's screen name on here so I can ask him directly?
Thanks!
You can contact him at the AB5 website. jeff@artisanbreadinfive.com
The book should have been more specific on the topic.
I'll give him a buzz.
