I went on a baking frenzy today, thanks to George Greenstein's Secrets of a Jewish Baker.  I followed one of his "Morning Baking" programs at the end of the book and made muffins, milk bread, whole wheat bread, and Italian bread.

Can you explain the "morning baking" program a bit, if it's not too complicated?

At the end of his book, George Greenstein has 12 morning baking programs.  Each one is arranged so that, in about 3 to 4 hours you end up with 4 or 5 different kinds of bread, muffins, etc.  He tells you which steps to work on and about how long they will take.  For example, today's first step was to preheat the oven for the muffins, then start the sponge for the milk bread.  The next step was to mix and bake the muffins.  Then while they were baking, I mixed the milk bread.  Etc. Etc.

He pretty much just helps you organize your time like a professional baker would.  It's a great way to spend a morning baking and wind up with a nice array of breads.  After following his "programs" for a while, I would expect that one could do the same thing with any number of recipes.

I really like this book (Secrets of a Jewish Baker).  His recipes are straightforward and easy to follow, and everything I've made from it has come out great.  I will warn you that he uses volume measurement, rather than weights.  But I am still really happy to own this book.

On Amazon there are two "Secrets of a Jewish Baker".  One is subtitled 125 breads from around the world, and the other Authentic Jewish Rye and other Jewish Breads.

Both look like good books.

Thanks for the nice comments.  We have been enjoying the breads this afternoon and evening.  I think I'll have a PB&J on milk bread before bed.
