We had some matcha in the cupboard that we never had much success with so I decided to try baking with it. I use a recipe from the King Arthur site.

It was generally a success. You can definitely taste the matcha. It's good, though I think I like my matcha a little sweeter and would consider making something like a matcha pineapple bun next time.

Again the crumb of your loaf bread looks great and it sure got a good amount of rise! Looks extremely appetizing to me.
I love swirl bread, and would be making matcha swirl bread every week if I could - the rest of the fam unfortunately dislikes the slight bitterness of matcha. Like you, I also prefer to sweeten matcha products a little more, especially matcha mochi and roll cakes with lightly whipped cream. A little matcha goes a long way though!
Would love to see your matcha pineapple buns if you do end up making them.
The loaf looks really nice and sounds tasty. Maybe some coconut oil to sweeten it up?

Looks Delicious Floyd.
And a visual treat too - it looks like you got the matcha amount right - I was so scared when I tried and the flavour and colour was so weak.

I went pretty heavy on the matcha. I had maybe an extra 3/4 of a tablespoon over what the recipe called for, so I went ahead and added it. It did make it dark and flavourful enough that you can taste it. It also added a noticeable caffeine punch! I was pretty wired yesterday after having some yesterday morning with my normal coffee intake.
Floyd, this looks great and for people like myself who love matcha, I'm sure we'd love it. When I've added matcha I always add some sugar to it to balance out the bitterness of the matcha.

So beautiful!
I have a new found love for milk bread. I like this loaf.
And let's put the 'pineapple' in pineapple bun! 😆 I remember watching Paul Hollywood trying to figure out the melon in melon bun lol
