Is this the way the mixer is supposed to function? I thought the dough was supposed to form a ball and that the mixer was supposed to knead it up against the side of the bowl as it turns, but this has happened maybe once for me in the couple dozen loaves or more I've made with the mixer so far. Right now, I'm mixing up four whole-wheat sandwich loaves and it is doing the same thing, spinning around the column, not to mention climbing up into the shaft. Is there a trick to this or something I'm missing?

I should mention that the dough does get kneaded, so I guess I have no reason to complain. I'm just not sure it's going about the task the way it is supposed to. Wouldn't it knead faster if it were balled up?

The easy fix is to hold back 10% or so of the water so that the dough is stiff enough to ball up. It will travel around the bowl and then you can add that water slowly as it kneads.

I suggest that you search for YouTube videos that demonstrate the Bosch Universal Plus mixer. Does your BUP work the same way?
