Not a bialystoker -- though you've made me want to try -- but my guess is your lava-bialys erupt because of a shaping issue. You have to convince the dough to rise in the ring & not in the center. Perhaps you need to be firmer in the way you create the central depression.

Here's a video on making bialys. The shaping starts at about the 5:00 mark. What's important is that the center indentation is just a thin membrane of dough; almost as if you were pulling a windowpane. That thin layer, even when it expands during baking, isn't enough to force out the filling.

If the issue is the centre rising too much then how about pricking it with a fork?

The bake time on the 1st recipe I linked to is insane. The smell was overwhelming in about 7 mins. I took them out at about 9 mins after I checked to see if the hit 200◦. Tasty though.
