Yes indeed you can definitely customize them. I have made them a few times now. I know you are adept at making a good short pastry, adding a couple of tablespoons of tumeric and one tablespoon of curry powder to the flour will give you an as authentic flavored and colored dough.
This is the formula I followed this round. I used what Zi had handy. Substituted can green chilies for the green onion and dried red pepper for the fresh scotch bonnet.
