How to use coriander seeds in bread recipes?

Guys I want to try adding whole coriander seeds into my bread like they do in Russian dark rye bread. My question is what do I do about the coriander seed husks. Should I remove them somehow, grind up the whole coriander seeds with husks or just add the whole coriander seeds with husks into the bread recipe? Are the husks eatable?  The bread recipes usually just say use coriander seeds. What's is your advice guys?

For Borodinsky bread (the classic bread with coriander seeds) there are some ground seeds added to the dough (often in the scald), and some whole seeds sprinkled on top. If you have those huge seeds (perhaps that's the Indian type? not sure), then perhaps gently smash them before putting on top, so they are not so big.

I am not sure what you mean by husks. Whatever I buy as coriander seeds is edible as a whole, and if does have a husk, then it makes no difference...

The coriander seeds I normally buy (in a US supermarket) have a hard, hollow shell that fractures into curved thin segments. That would be the husk, I think. These might be unpleasant to eat.  I think that either the grinder has to be run extra to grind them up too, or they should be sifted out.

 These are typical coriander seeds that I can buy in the US at ordinary supermarkets.

Yeah for sure! Hard to judge the size, but it seems these are the large variety, you could just lightly crush them when putting on top of the bread so it's not too much coriander taste in one bite. But that's personal preferences.

I can grind them for sure but removing that tiny "husk" or shell would be impossible I think. So I assume that everyone is eating the thing whole or ground up without removing shells correct?

My cilantro flowered very early this year and it looks like I'll have a LOT of coriander seeds.  The seeds are delicious, but the husks, altho certainly they are "edible", have a seriously obnoxious mouth feel.  I tried pinching and rolling the seeds between my fingers, but the husks are on firm.  Wish someone had an answer for the OP!  For now I'll continue crushing the seeds and sifting out the husks.

As far as bread recipes, has anyone tried something like a cranberry coriander bread?
