In my rush to get the goods to " market" I made ba couple of key mistakes. The baguette scaring is grade school. However, I have that solved. Two scores instead of three will be aces. Next, in my haste I neglected to steam the rye. Lastly I have to time out the proofing of the baked better. In a effort to get the rye on the oven, I was forced to take the Filone out blonder that I like. All manageable misques. Thanks for the compliment .
Today I was cleaning out a big pile of old recipes and pulling out a few things of interest. One thing was an article on time managment in baking. I think it was geared more to a commercial bakery, but useful information. I put it aside to read when I find the time, lol. However, I could really benefit by being more organized, so that I could bake things in parallel. It's not easy!
