Today's exercise was a huge success. By taking care to shape a tight skin on the loaves, I achieved the objective of more oven spring! The formula and fermentation conditions remained the same.

The best crumbs I have achieved have come with 100% semolina bread bakes.
I know it is a difficult thing to accomplish. However, for some reason this is for me the best kind of flour to work with.
