Vegan egg wash for shine and browning.

Hey does anyone have any really good vegan eggwash solutions? The closest I've gotten was maple syrup+vegan butter which browned nicely but the shine was minimal. I was thinking maybe a pea protein powder+water and emulsify that in oil with xantham gum?  I've also heard corn starch slurries work well? But the shine and browning come from the fat and protein content right? Anyone have any suggestions? Thanks!

I once worked at a bakery where we had vegan pastries for a short time, Myokos butter and agave syrup both provided an acceptable brown and sheen 

in a water slurry. Can use to paint contrast on dough surfaces.  Paint some magic! :)

For shine try gelatinizing the slury first by heating it up. This will also thicken it up as well so you only need about a teaspoon of whatever vegetable powder/flour you use to half a cup or more of water. Let it cool down before use. You can also add more water after it cools if too thick to brush on easily.

Hi, Remembered an article on the King Arthur blog where they tested vegan washes. Their findings found soy milk mixed with a bit of maple syrup produced good results. It seems the protein in the milk did the trick- and for those who can’t have soy, oat milk was the runner-up. This one/two combo did the trick for shine and browning.
