This is a 'sweet' low hydration starter not dissimilar to a lievito madre?
How was the taste?
Hi Abe, The taste is light, a bit nutty, chewy and not too sour. Both 'lievito madre' and formula are 79% hydration. By sweet, if you mean the starter has a cidery sweet fragrance, then yes.
