  Look what I have created! The Brooklyn N.Y. Thick airy base Siciliano pizza pie! The one we remember from days gone by!

 

The combination of a high heat par-bake & 20% extra fancy durum wheat (semolina rimacinata, as our Italian friends call it) makes for a very airy crispy base. The generous topping of mozzarella cheese is quintessentially Brooklyn! Attached is the most up-to-date version of the dough formula.
