polin stratos oven

hi all,

my husband and I are in the process of opening a sandwich shop/ bakery in Chicago and we're oven shopping. I had worked at a bakery previously and used a mewi oven, and had originally hoped to get one of those but it looks like theyre out of our price range. I got a decent quote on a Polin stratos oven and on paper it looks like everything we would need for our daily bread production. does anyone have any opinions on these ovens they could share with me? I would love some input before I pull the trigger. I tried to search this site and came up with little info, so apologies if its posted elsewhere and I missed it. its my first day :)

I looked very hard at the Stratos for my cottage bakery, and would still love to upgrade to one. Dan the Baker (https://dan-the-baker.com/) used one for a long time, and recently upgraded to another Polin. He seems to be really great about answering people's questions. Might be worth getting in touch with him.
