The stiff starter will now be strengthened over the next two days for the enormous task that awaits her. (Ms.  Valentina, Bria.)

 Very much like most other beautiful women I have had the pleasure to know in my life, Ms. Valentina Bria is proving to be very high maintenance. With MWilsons, confirmation that something is amiss, I have decided to postpone the panettone bake until I can get the Pasta Madre, mature and, sorted out. The new tentative bake-off, New Years' weekend 2021. These things should not be rushed, otherwise, failure is guaranteed before the first stretch and folds ever take place.

I skipped last night's 8:00 PM feeding. I reverted back to a twelve-hour feeding schedule, for the time being. I am encouraged by the 12hr. fermentation. Have a look.  12 Hr. fermentation
