Suppose I want to double or quadruple a formula. How can I determine the temperature at which the oven should be preheated to compensate for the additional heat loss/temperature drop during loading?
Have all of the loaves positioned so that you don't have to step away from the oven to reach them. That will give you the shortest possible loading time.
Usually, preheating 50 degrees (Fahrenheit) over the baking temperature is adequate. I haven't found it necessary to go higher, whether loading one loaf or a half-dozen loaves with the ovens I've used here in the U.S. The oven I used in South Africa was a different story, since it couldn't have reached that temperature.
