I had some store bought (commercial) muffins from Amazon Fresh today. They were so tender, they literally dissolved on my tongue or in water. Has anyone else experienced a similar texture with commercial cakes?
I found it too tender for my liking, dissolving and almost becoming a paste once bitten into. What is it in the recipe that makes it too tender? If it a high sugar content or a different additive?
Can you post the ingredient list from the package ? That might give hints, but procedures can cause softness as much as ingredients.
What country are you in ? (That makes a difference.)
I'm in the US, ingredients are:
More sugar than water. More oil than egg.
I suppose those things could do it. Maybe cornstarch too. Also depends on amount of leavening.
Sounds more like a cupcake than a muffin. Must have been very sweet.

sounds like its from a 50 lb bag of bake n joy muffin mix.
Its for extended shelf life.
I used to throw my unsold muffins in the dumpster at the end of the day,
many bakeries using mix bake them a day in advance.
